Chili Crisp Whipped Ricotta Toast

This is the first thing I make when we get home from a tour. The whipped ricotta situation happened by accident at a friend's apartment in Chicago — someone had ricotta from Sunday, someone else had chili crisp from a Chinese-grocery run, and there was one heel of sourdough on the counter. Three ingredients, ten minutes, and the whole band stopped moving.

Ingredients

Serves 3–4 · Prep 5 min · Cook 5 min

  • 1 loaf good sourdough, thick-cut (day-old is better)
  • 1½ cups whole-milk ricotta (drain in cheesecloth 30 min for max fluff)
  • 3 Tbsp extra-virgin olive oil, plus more to finish
  • Zest of 1 lemon
  • Flaky sea salt
  • 3–4 Tbsp Bobby Butter Chili Crisp
  • 2 tsp raw honey
  • Fresh basil leaves, torn — small handful
  • 1 lemon, cut in wedges

Method

  1. Char the toast: heat a dry cast-iron pan over medium-high until it's smoking. Drop the sourdough in dry, press flat with a spatula, and leave it for 2 minutes a side until you get real black grill marks. Don't oil the pan. Don't rush the char.
  2. Whip the ricotta: in a food processor, blitz the drained ricotta with the olive oil, lemon zest, and a big pinch of flaky salt for 45 seconds. Scrape down, blitz again. You want it airy and glossy, like frosting.
  3. Build: pile the whipped ricotta on each toast, dragging the back of a spoon through it to make peaks and valleys (the valleys hold the chili crisp — this is the move).
  4. Drizzle heavy on the chili crisp — enough that the oil pools in the ricotta. Then a tiny thread of honey across the top for balance.
  5. Finish with torn basil, a hard squeeze of lemon, one more crack of flaky salt, and a last drizzle of good olive oil. Eat immediately, standing up.

The Story

The trick is the char on the toast — you want it almost too dark, so the bitter edge fights the sweet honey and the crunchy chili oil in your mouth. Whipped ricotta gets glossy and structural when you blitz it long enough, and the peaks-and-valleys move is what turns this from a party trick into a magazine plate. A little goes a very long way. Twelve toasts, one jar, six impressed friends.
